RABBIT LOIN WITH PGI VALTELLINA APPLES AND POPPY SEEDS
- 2 RABBIT LOINS
- 2 GOLDEN DELICIOUS APPLES (PGI Valtellina apple)
- 2 TABLESPOONS POPPY SEEDS
- 1 GLASS OF BRANDY
- 1 TABLESPOON BUTTER
- SALT AND PEPPER TO TASTE
First cook the floured rabbit loins, sprinkled with poppy seeds, in the oven and then brown in a pan. Cook for at least about 5 minutes with the PGI Valtellina apples, peeled and cut into wedges. Halfway through the cooking, douse with brandy and season with salt and pepper. Once the mixture is cooked through, slice the loin and place it on a hot serving plate in a fan shape with the apples.
